Dating back to 1906, this PDO ROQUEFORT PAPILLON was born in the Roquefort-sur-Soulzon Papillon Fromagerie, located in the heart of the Aveyron region, for which the exceptional aveyronnais land and human activity are indispensable. By carefully monitoring the temperature and humidity of the cellars, cheesemakers allow the cheese to develop its distinctive flavor during the process.

Its traditional production process involves cultivating the blue mold used in the cheese at its self-owned bakery. As the cheese matures and develops in the local natural environment, it showcases strong characteristics of its territory.ROQUEFORT PAPILLON stands out by the numerous blue streaks and broad cavities on its white paste. In the mouth, its rich and flexible texture develops a typical balanced and long-lasting taste.
